Each stone grinder is designed to have a small footprint and be relatively cheap to run. These machines achieve the same great results as the larger machines. In this section, the Spectra 11 melanger and the Spectra 11X melanger both have a capacity of 5kg.

The SPECTRA 11 and 11X tabletop bean to bar machines have ventilated and non-rotating lids. Allowing you to view and open the lid whilst the machine is running.

 

The grinding stones are easy to lift out and the drum is leakproof.

The Spectra 25 and Spectra 45 machines come with a double scrapper arms ensuring faster performance. The tension on the granite stones can be adjusted to obtain different grades of shear at different stages of grinding. This feature is useful when dealing with a variety of ingredients. The machines use double granite roller stones that rotate over a granite base. The stones create tremendous shear, reducing, for example, cocoa nibs to fine chocolate liquor with a particle size of the order of fewer than 15 microns.

The tension from the stones can be fully released for the conching cycle without grinding further, such that the cocoa liquor is continuously exposed to air without grinding it further.
